The Sauce
- 118.29 ml ketchup
- 19.71 ml low sodium soy sauce or 19.71 ml regular soy sauce, your choice
- 2.46 ml salt
- 29.58 ml Worcestershire sauce
- 44.37 ml sugar
- 7.39 ml sesame oil
- 2.46-4.92 ml cayenne pepper (depending on how much "heat" you can handle!)
- 118.29 ml chicken broth

- 29.58 ml cornstarch
- 2.46 ml sugar
- 1.23 ml salt
- 3 whole double boneless skinless chicken breasts, cut into cubes
- 59.14 ml oil
- 29.58-44.37 ml minced fresh ginger
- 14.79 ml minced garlic
- 1 small onion, chopped
- 1 medium bell pepper, any color,sliced into strips (2 small peppers can be used, to give more color contrast)
- 226.79 g mushrooms, sliced
- 1 carrot, thinly sliced on diagonal
- 236.59 ml snow peas
- 354.88 ml cashews
- sesame seeds, toasted
directions
- Combine sauce ingredients in a bowl and set aside.
- In a large plastic resealable baggie, combine cornstarch, sugar and salt; Add chicken chunks, seal baggie and shake to coat chicken in cornstarch mixture.
- Heat wok or large frying pan on high and add oil; heat to hot, but not smoking.
- Add chicken pieces, garlic, ginger and onion, stirring until chicken is lightly cooked on the outside (about 1 minute).
- Add bell pepper, mushrooms, and carrots; stir 2-3 minutes until softened.
- Add snow peas and sauce, cooking until sauce comes to a boil.
- Add cashews and sprinkle with sesame seeds.
- Serve immediately, over rice if you'd like-- YUM!

I LOVE this recipe. It is exactly like the one I learned how to make in High School. I had lost the recipe years ago and have missed it dearly. I did double the sauce (thinking ahead) so I could cook up some Spatzle noodles to change it up a little for another night's dinner. This will be made again and again! Even my picky husband loved it! Thanks for posting!

My dish looked like the photos posted which was what attracted me to the recipe in the first place. It is a beautiful dish. The dish was easy to make and very good. I followed the recipe and used the recommended veggies, etc. Follow this recipe it was written well. I did add hot chili paste instead of the cayenne pepper.

This is a great recipe even if you change some of the veggies and meat. I used 2 large pork steaks that needed cooking and substituted celery for the green pepper and mushrooms due to family allergies. I also left off the ginger since I don't like it. Other than that I followed the recipe pretty closely. I made the mistake of putting the full 1 teaspoon of cayenne and DH and I thought it a little too spicey...but adult DS said it was perfect. Irregardless I will make it again with a little less cayenne and it will become part of my regular Oriental meals. A very tasty dish! I was surprised that by using that much catsup that is didn't taste like catsup at all and that it made a nice medium thick sauce without needing additional cornstarch. EASY too!
