  • Blend eggs and water; set aside.
  • Heat oil in a hot wok or large skillet over medium heat.
  • Add green onions; stir fry for 30 seconds.
  • Add egg mixture; scramble.
  • Stir in rice, gently separating grains.
  • Add shrimp and lite soy sauce; cook stirring, until throughly heated.
  • Makes 6 servings.

  2. DH and I LOVED this recipe! I did use about 3/4 lb shrimp. The only other change I will make next time is adding 1/2 cup chopped yellow onion in addition to the green onions. You could easily substitute chicken or pork for the shrimp, too. Very yummy!
     
  3. This is absolutely the best I've ever eaten. My family loves it, my friends love it. My grandkids and I make it together so it is quite easy. Highly recommend. I just use a little less soy sauce.
     
  4. My boyfriend just said, "This is AWESOME!" I didn't use the green onions, but used a 1/2 cup of a frozen and chopped onion, celery, and pepper mix. I also added chopped garlic, an additional egg, about 1/2 cup chopped fresh mushrooms, and some no salt seasoning. Yummy! This is definitely going to get made again!
     
  5. this recipe couldn't be easier!! I love adding extra green onions to give it a little extra spice. I also love how versatile this recipe is, I could even add peas and carrots.

  3. I must say, this was pretty good! I used minced onion instead of real onions and added some salt, peper, and MSG. I wish I'd read the other reviews and added garlic too. Seems like it may have been missing something; but I think the garlic may be just what it needs. I will DEFINITELY be making this again!
     
  4. Perfect QUICK recipe for that leftover dried up rice that nobody wants to eat. I used Sesame Oil instead of Vegetable Oil and I also added peas. Yum! I will absolutely make this again. Thanks :)
     
  5. This was very good but missing some of that authentic chinese taste. I used sesame oil instead of vegetable oil and added some frozen peas and carrots at the same time as the shrimp. The shrimp was a little bland so next time I am going to dip the shrimp in egg and fry it for a minute or two and then add it again when the recipe calls for it.

My husband and I moved to Las Vegas after retirement in 2000. We lived in South Bend, IN for about 26 years. We both like to travel and we have taken up RV camping and enjoy it a lot. Most of our camping is done in Nevada Utah Arizona and So. California. During the summers our (almost) 9 year old Granddaughter will go with us sometimes. Our Daughter, Son-in-law, and Granddaughter have lived in Las Vegas since January 2001.
