  1. This made a great lunch. I added carrots, cilantro and peanuts, and skipped the sugar in the dressing. I also subbed sesame oil for the oil and sesame seeds (just a drizzle). Served it with baked tortilla chips for a healthier crunch (sounds odd, but it worked well actually!). Thanks!

Nice salad, made it just for one, turned out quite nice although I wasn't too fond of the dressing, too sweet for me, but the salad was good, love the crunch of the water chestnuts and the nutty taste of the sesame seeds. I did add salt and fresh ground pepper and used a plum tomato for garnish. Thanks for sharing.
     
  3. A very nice refreshing salad. The family really enjoy the light but filling meal on a hot spring day. I served this Chicken Salad with other salad vegetables such as red pepper, sliced snow peas, grated carrot, sliced cucumber and cherry tomatoes. Just delicious!

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store. When I'm not waiting on my family or working, I like to do counted cross-stitch and recently started a new hobby----quilting.
