Beef and Broccoli Stir-Fry

"Hey, I never tried this recipe. I found it on recipesource.com whenever I was looking for the nutritional analysis on the Beef and Broccoli Stir fry I had eaten at a Chinese restaurant. I absolutely LOVE that stuff. It's the greatest stuff. So you know that this has to be good. The prep time and cook time is unknown. If you could please tell us that would nice."

  • Combine all marinade ingredients in a bowl.
  • Combine all seasoning sauce ingredients in a cup.
  • Thoroughly mix beef with marinade and marinate for 30 minutes.
  • Heat wok over highest heat, when hot, swirl in 2 Tbsp peanut oil.
  • Add ginger and salt and toss a few seconds.
  • Add broccoli and stir fry one minute, then add water, turn heat to med-high, cover, and steam until crisp tender.
  • Uncover and turn heat to high, stir frying until water is evaporated.
  • Remove broccoli and reserve.
  • Reheat same wok (without rinsing) and, when hot, add remaining peanut oil.
  • Add beef slices and stir fry until lightly browned but not cooked through.
  • Do not stir fry too vigorously or meat will not brown, it is better to press slices against sides of wok to sear.
  • Add broccoli to wok and toss.
  • When hot, stir in seasoning sauce and stir until sauce thickens (it's a good idea to whisk the sauce in the cup just before you hurl it into the wok).
  • Turn onto a platter and drizzle sesame oil over the top.
  • The sugar in the marinade and seasoning sauce acts as a flavor enhancer rather than a sweetener.

  1. I've made similar recipes that went well after cooking it a few times, so I chose this one to work with. I added more ingredients (onion, mushrooms, garlic, etc)and substituded white cooking wine for rice wine. It worked very well and I particularly like how the broccoli turned out! After getting used to this type of cooking, particularly the cornstarch sauce getting cooked into the ingredients, it works very well and tastes great!
     
  2. Recipe turned out very well. Easy to make. I did have to substitute soy sauce for the Oyster Sauce since I couldn't obtain any locally. I also used marsala wine cooking wine since I was out of rice wine. It was delicious. One slight correction, the broccoli is not part of the marinade.
     
  3. This was an easy recipe to put together. I did add carrots, onions and garlic, just a habit of mine. Not sure if it tastes like take-out, I've never had beef and broccoli as take-out but it sure was good! Thanks.

I am from Kentucky. I'm 14 years old, and I love to cook. I live way out in the country so it's hard to find fresh herbs, and it's hard to make a quick trip to the grocery store to buy a missing ingrediant. We have to drive 30 minutes to get a gallon of milk! I enjoy healthy cooking. If you find a recipe of mine on here it's most definitly healthy. And I always tweak my recipes to become even more healthy for you. Like cake recipes I always replace the oil with natural applesauce which I think gives everything a better flavor. I'm not an expert on foods, however I would love to goto culinary school. I enjoy watching people cook on TV. I DO watch Emeril, and everything on food network. I love to watch the Cooking Episodes on the Health Channel. It really does give you some ideas for healthy meals. And in order to cook a recipe out of a Muscle and Fitness Magazine you got to be ready to tweak the ingrediants and get creative, because not all of them will turn out tasting the best. I also subscribe to Light n Tasty. I look forward to my new issue ever 2 months. I love that magazine. It's truely one of my favorites. It's alot better then Cooking Light if you ask me. School, my most favorite of all subjects is History. I LOVE IT! I always like to watch the educational channels as much as any ol' channel. I have a big interest in past wars, and politics. I'm not saying that I want to be president, I'm just saying I am very controversial whenever it comes to politics. And the 2000 election was so obvious, I knew George Bush would get it. Believe it or not, my mom asked ME who she should vote for. And I had already considered the pros and cons of George and Al, so I was 100% George Bush. Well, I'm going to go.
